The Coffee Process -The Plant
There are two main species of coffee plant, which between them produce 95% of all the coffee drunk worldwide.

Robusta
This variety grows lower down and produces cherries continually. These grow in clumps on the branches, making them easier to pick. Robusta plants produce a high quantity of lower quality beans.

Arabica
This variety grows on the higher slopes and produces as smoother, more refined coffee flavour. The arabica plant flowers nine days after the first rains and produces green cherries which take eighteen months to mature and ripen. This means there is a smaller number of higher quality beans.

Left alone, a coffee plant would reach 15 metres tall, but cultivated plants are pruned as they only reach 1.5 metres, to allow the pickers to reach all the cherries
