So we have grown the plants, harvested the cherries, extracted the beans and shipped them to the UK and now this is where Pollards magic takes place.
Once we have decided what to roast we preheat our drum roaster to just the right temperature. Once the bean has been dropped in thena transformation starts to happen. At first the coffee bean dries out, turning a orcha yellow and loosing about 20% of it weight. As it approaches 190 degrees centigrade, the simple sugars in the bean start to caramelise and the bean slowly changes colour to a pale brown
As the temperature rises, more reactions occur in the beans and microscopic pockets of gas start to form. Eventually these gasses explode out of the bean causing it to crack like popcorn. At this point the heat is turned down as the coffee is self sustaining and the roasting carries on regardless.
Eventually, the coffee wil be just right and one our experienced Roasters will decide to open the roaster door and let the hot coffee beans fall into our gentle air cooler.
Unlike many other roasters we roast only in small batches and give the coffee plenty of time to roast allowing the full flavour to develop.
