The Coffee Process - Processing
After picking, the skin, musilage and parchment are removed by one of two processes:

Dry Processing
The cherries are picked and then left on mats in the sun for up to three weeks by which time they have dried and become brittle. They are hulled to break off the dry outer layers, leaving the green beans, which are then stored.

Wet Processing
The cherries are soaked in water and then put through a pulper to break the skin. They are then soaked for a further 12 – 36 hours until the musilage drops off leaving the beans surrounded by clean parchment..These are then rinsed, density sorted and laid out on patios to dry in the sun.The beans are then stored in the parchment in wooden lined rooms where they dry out evenly, which is very important when it comes to the roasting process.
